Pakhala Diwas 2026: Odisha’s Celebration of Tradition, Culture, and Health

On March 20, 2026, Odisha once again celebrates Pakhala Diwas, a day dedicated to the state’s beloved traditional dish, Pakhala. Introduced in 2011, the occasion has grown into a cultural phenomenon, uniting Odias across the globe.

Pakhala, a simple yet nourishing dish of rice soaked in water and fermented overnight, is more than just food—it is heritage.

Served with vegetables, potatoes, greens, chutneys, curd, pickles, and sometimes fish or prawns, it embodies Odisha’s agrarian roots and culinary diversity.

The fermented water, known as Torani, is also consumed for its refreshing qualities.

The dish holds spiritual significance as part of the sacred Chappan Bhog offered to Lord Jagannath at the Jagannath Temple.

It is equally valued for its health benefits, being rich in probiotics, vitamins, and minerals that aid digestion, boost immunity, and help the body withstand Odisha’s scorching summers.
